Turkey seems to be a holiday bird. Just because Thanksgiving is over and Christmas is soon approaching, doesn’t mean you have to only eat a roasted turkey. Here are a few easy recipes to make your turkey a little more exciting.
Turkey Crostini #1
Pre-heat oven to 350 degrees
1 baguette sliced in small rounds
Thinly sliced turkey breast. Size of the bread rounds
A triangle or wheel of brie cut to fit on the bread rounds
A red pear.
A sheet pan
Place rounds on sheet pan. Top with turkey, pear and brie. Bake in oven for 10 minutes. Enjoy!
Turkey Crostini #2
Pre-heat oven to 350 degrees
1 baguette sliced in small rounds
Thinly sliced turkey breast. Size of the bread rounds
A triangle or wheel of brie cut to fit on the bread rounds
A handful of arugula
Cranberry sauce (recipe to follow)
A sheet pan
Place rounds on sheet pan. Top with arugula, turkey, and brie. Bake in oven for 10 minutes. Put a small dollop of cranberry sauce on top of each round. Enjoy!
Cranberry Sauce
1 bag of cranberries
1 cup of orange juice
¾ cup of sugar
Blender
Cinnamon
Orange zest
Bring orange juice and sugar to a boil. Add cranberries and bring to boil, then let the sauce reduce for 10 minutes. Put the sauce in a bowl to cool for about 10 minutes. Then place sauce in blender and puree for 10 seconds. You don’t want it to be runny, just want to get the lumps out. Pour into serving bowl. Zest an orange on top of the sauce and sprinkle some cinnamon. Refrigerate for 2 hours.
