A Quick Treat: Grilled Rum Pineapples
After going to the Rodizio Grill during Denver Restaurant Week I had a major craving for cooked pineapple (because that was my favorite thing I had there). That sweet, spicy taste of grilled pineapple was calling me, so I took to the stove and created a cooked pineapple recipe of my very own.
There are 2 ways to cook this: the 1st time I tried it, I cooked the pineapple in a saute pan on medium high heat. The 2nd way I tried it was to grill the pineapple. The only reason I didn’t grill it the first time is because it was snowing and I hate being cold.
This is the easiest yummiest recipe! You will need:
- FRESH pineapple. Don’t go buying that nasty canned stuff, only fresh will do.
- Cinnamon
- Dark Vanilla Spiced Rum (I use the boyfriends rum he got in the Bahamas last year which has a very inappropriate name that I will leave out for now.)
Slice your FRESH pineapple into rings or half rings. Pour a 1/2 shot or so of the rum on top then sprinkle with cinnamon. Let sit for about 10 minutes to soak up the rum. Keep your boyfriend/husband/anyone else who ventures into your kitchen from eating the marinating pineapple by having a cup of pineapple pieces they can snack on ready to go.
Stove Top Cooking:
Heat a saute pan over medium high heat. Place pineapple slices on the hot surface and cook until you get a nice golden glaze. Flip and do the same for the other side.
Grill Cooking:
Place your pineapple on the grill for about 2-3 minutes each side or until you have some grill marks.
Serve to happy and lucky eaters who will love you for giving them such a wonderful gift.
