Italian Grilled Peaches
Summer is just around the corner and with that comes longer days, grilling, and a plethora of in season fruits and vegetables. For those of you who have been reading my blog, you know I have been starting to play with some new grilling recipes to prepare for the best season of the year. I have grilled rum soaked pineapples as well as sharing with you my own recipe for cowgirl burgers, and today I will continue with this theme by sharing with you my very own recipe for Italian grilled peaches over vanilla ice cream.
Grilling fruit is a great way to take advantage of the season and switch things up a bit from just eating raw fruit. When you grill fruit the sugars are released and the flavors are intensified. It is really quite delicious! For today’s recipe you will need the following ingredients:
- 1-2 Ripe peaches sliced to about 1/4 inch thick rings or slices (or nectarines if you prefer)
- 1/4 – 1/3 cup Amaretto Liquor
- 1 Tbs. Sugar
- Vanilla bean ice cream
If you can’t find ripe peaches, because it is still a little early for peaches, you can place them in a paper bag for a day or two and this will ripen them right up!
In a bowl toss the sliced peaches, amaretto, and sugar. Let sit for about 20 minutes (or while you eat your dinner). Heat grill to medium temps. Now with some thongs go ahead and place your peach rings over the flames. Using a brush (I prefer the silicone kind) brush access amaretto over the top of peaches. Let cook for about 5 minutes then turn. Repeat the process on this side. When the peaches done and showing beautiful grill lines, go ahead and place them back in the bowl with the left over amaretto.
In serving bowls, scoop out 1-2 scoops of ice cream. Top with peaches and a little of the amaretto.
